The HACCP System

HACCP stands for Hazard Analysis and Critical Control Points and is an important component of food safety management. Functions of the System

Seven steps of the HACCP system
  1. Hazard Analysis: Identification of potential biological, chemical and physical hazards that could affect the final product.
  2. Critical Control Points (CCP): identification of points for control and prevention of the possible hazards.
  3. Critical Limits: Establishment of specific limits to ensure the safety of the end product
  4. Monitoring: Regular monitoring of critical limits
  5. Corrective Action: Measures taken to respond to deviations from the critical limits
  6. Verification: Verification of the effectiveness of the system
  7. Documentation: all data collected within the HACCP system must be documented
